- 1 (14 oz) can diced tomatoes (or fire-roasted for more flavor)
- 3 cups chicken broth
- 1 1/2 cups cooked shredded chicken (rotisserie works great)
- 1 cup chunky salsa (mild or spicy, your choice)
- 1 cup tortilla chips (broken into smaller pieces)
Optional toppings:
- Shredded cheese
- Avocado slices
- Sour cream
- Cilantro
- Lime wedges
Combine main ingredients:In a large pot, combine diced tomatoes, chicken broth, shredded chicken, and salsa. Stir well. Simmer:Bring the soup to a boil over medium-high heat, then reduce to a simmer. Cook for 15–20 minutes, allowing flavors to blend. Add tortilla chips:Stir in tortilla chips just before serving, or sprinkle on top for added crunch. Serve:Ladle soup into bowls and garnish with your favorite toppings like cheese, avocado, and cilantro.
Choose mild or spicy salsa to adjust the spice level.
To create a vegetarian variant, replace the chicken with either black beans or canned corn, and opt for vegetable broth.
If you prefer, you can use fresh tomatoes—just be sure to blend them before cooking.
