Authentic Andhra Chicken Curry (Kodi Kura) Recipe – Spicy South Indian Delight

A traditional and spicy chicken curry from Andhra Pradesh, made with aromatic spices and rich flavors.

For the Curry :
- 500 gram chicken, bone-in preferred
- 2 tsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2-3 sprigs curry leaves
- 2 medium onions, finely chopped
- 2 medium tomatoes, chopped
- 1 tbsp ginger garlic paste
- 1-2 green chilies, slit
- 1 tsp red chili powder
- ½ tsp turmeric powder
- 1 ½ tsp coriander powder
- Salt to taste
- Fresh coriander leaves, chopped
Optional Spice Blend (for more flavor) :
- 1 tsp fennel seeds
- 4-5 peppercorns
- 1 -inch cinnamon stick
- 2 cardamom pods
- 2 cloves
Step 1: Optional Marination
Step 2: Cooking the Base
Heat oil in a heavy-bottomed pot.Add mustard seeds and cumin seeds; let them splutter.Add curry leaves and green chilies.Add chopped onions and sauté until golden brown.Stir in ginger garlic paste and cook until raw smell disappears.
Step 3 : Add Tomatoes and Spices
Add tomatoes and cook until soft.Add red chili powder, turmeric, coriander powder, and the optional ground spice mix.Mix well and cook until oil starts separating.
Step 4 : Cook the Chicken
Add chicken pieces and coat with the masala.Cook uncovered for 5–7 minutes to brown the chicken.Add 1–1.5 cups of water, cover, and simmer for 25–30 minutes until chicken is tender.
Step 5 : Final Touch
Open the lid and cook for another 5 minutes to thicken the curry.Garnish with chopped coriander.Serve hot with rice or chapati.

Adjust chili powder according to your heat preference.

For deeper flavor, use gingelly oil (Indian sesame oil).
