For the Marinade (Serves 2–4 steaks):
- ½ cup extra virgin olive oil
- ¼ cup fresh lemon juice (about 2 lemons)
- 4 garlic cloves, minced
- 1 tbsp dried oregano
- 1 tsp dried thyme (or fresh)
- 1 tsp Dijon mustard (optional for depth)
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp red wine vinegar (optional)

- Ribeye
- Sirloin
- Flank steak
- New York strip
Make the Marinade:
In a medium bowl or jar, whisk together olive oil, lemon juice, garlic, oregano, thyme, mustard, vinegar, salt, and pepper.
Marinate the Steak:
Put your steaks in a shallow dish or a zip-lock bag. Versez la marinade sur la viande et massez-la pour une répartition uniforme. Cover or seal the item and place it in the refrigerator for at least 2 hours, ideally for 4–8 hours to achieve the best flavor.
Bring to Room Temperature:
Grill or Cook the Steak:
Grill on medium-high heat for 3–5 minutes per side, depending on thickness and desired doneness. Use a meat thermometer to check:Medium-rare: 135°F (57°C)Medium: 145°F (63°C)
Rest and Serve:
After cooking, allow the steak to rest for 5 minutes before cutting it. Accompany with tzatziki sauce, roasted potatoes, or a Greek salad.
- For safety reasons, do not use marinade as a sauce unless you boil it first.
- Best when cooked on a grill, but can also be pan-seared or broiled.
- Do not marinate for more than 10 hours, as the acidity could compromise the texture too much.
