Homemade Rotisserie Chicken Recipe – Oven or Grill

Ingredients
  

  • 1 whole chicken (3½ to 4½ lbs)
  • 2 tbsp olive oil or melted butter
  • tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • 1 lemon (halved)
  • 4 garlic cloves (crushed)
  • Fresh herbs (optional, for stuffing)

Instructions
 

Prep the Chicken:

  • Remove giblets and pat chicken dry with paper towels.
    Tuck wings under and tie legs with kitchen twine for even cooking.

Season:

  • Mix all dry seasonings in a bowl.
    Rub the chicken with olive oil or melted butter, then coat evenly with the spice mix.

Stuff the Cavity:

  • Place lemon halves, crushed garlic, and herbs inside the chicken.

Roast (Oven Method):

  • Preheat oven to 375°F (190°C).
    Place chicken on a rack in a roasting pan or on a vertical rotisserie stand.
    Roast for 1 hour 20 minutes to 1 hour 40 minutes, or until internal temperature reaches 165°F (74°C) at the thickest part.

Rest and Serve:

  • Let the chicken rest for 10 minutes before carving to retain juices.
    Serve hot or use leftovers in wraps, salads, soups, or sandwiches.

Notes

  • The size of the chicken and the oven can affect the cooking time.
  • For precise results, use a meat thermometer.
  • For the chicken to remain juicy, it must be allowed to rest.
