- 1 whole chicken (3½ to 4½ lbs)
- 2 tbsp olive oil or melted butter
- 1½ tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried thyme
- ½ tsp dried rosemary
- 1 lemon (halved)
- 4 garlic cloves (crushed)
- Fresh herbs (optional, for stuffing)
Prep the Chicken:
Remove giblets and pat chicken dry with paper towels.Tuck wings under and tie legs with kitchen twine for even cooking.
Season:
Mix all dry seasonings in a bowl.Rub the chicken with olive oil or melted butter, then coat evenly with the spice mix.
Roast (Oven Method):
Preheat oven to 375°F (190°C).Place chicken on a rack in a roasting pan or on a vertical rotisserie stand.Roast for 1 hour 20 minutes to 1 hour 40 minutes, or until internal temperature reaches 165°F (74°C) at the thickest part.
Rest and Serve:
Let the chicken rest for 10 minutes before carving to retain juices.Serve hot or use leftovers in wraps, salads, soups, or sandwiches.
