Prepare the Green Chutney:Puree all the ingredients for the chutney until it's smooth. To achieve a spreadable consistency, adjust the water. Put aside.
Prepare Bread Slices:On one side of each slice of bread, spread butter. Next, cover the butter with a layer of green chutney.
Layer the Veggies:Arrange the sliced potatoes, cucumber, tomato, and beetroot on three slices. Season with chaat masala, salt, and pepper.
Assemble Sandwiches:Place another piece of bread, buttered and chutney side down, over each. Apply a little pressure.
Serve as is or Grill:The sandwich can be served cold or grilled till golden and crisp with a skillet or sandwich toaster.
Slice and Enjoy:Slice into rectangles or triangles. Serve with more ketchup or chutney.
Notes
To suit your taste, adjust the chutney's spice levels. For a richer version, you can also add paneer or cheese.
