How to Make Authentic Indian Bombay Sandwich at Home

Ingredients
  

For the sandwich:

  • 6 slices of white or whole wheat sandwich bread
  • 2 medium boiled potatoes, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 small tomato, sliced
  • 1 small beetroot (optional), boiled and sliced
  • Butter, as needed
  • Chaat masala, to taste
  • Black pepper, to taste
  • Salt, as needed

For green chutney:

  • 1 cup fresh coriander leaves
  • 1/2 cup mint leaves
  • 2 green chilies
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • Salt to taste
  • 2 tbsp water (adjust for consistency)

Instructions
 

  • Prepare the Green Chutney:
    Puree all the ingredients for the chutney until it's smooth. To achieve a spreadable consistency, adjust the water. Put aside.
  • Prepare Bread Slices:
    On one side of each slice of bread, spread butter. Next, cover the butter with a layer of green chutney.
  • Layer the Veggies:
    Arrange the sliced potatoes, cucumber, tomato, and beetroot on three slices. Season with chaat masala, salt, and pepper.
  • Assemble Sandwiches:
    Place another piece of bread, buttered and chutney side down, over each. Apply a little pressure.
  • Serve as is or Grill:
    The sandwich can be served cold or grilled till golden and crisp with a skillet or sandwich toaster.
  • Slice and Enjoy:
    Slice into rectangles or triangles. Serve with more ketchup or chutney.

Notes

To suit your taste, adjust the chutney's spice levels. For a richer version, you can also add paneer or cheese.
