- 2 pounds flanken-cut beef short ribs
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp sesame oil
- 1 Korean or Asian pear (grated)
- 4 garlic cloves (minced)
- 1 tbsp grated ginger
- 1 small onion (grated)
- 2 tbsp mirin (optional)
- 1 tbsp rice vinegar
- 1/4 tsp black pepper
- 2 green onions (chopped)
- 1 tbsp toasted sesame seeds
Prepare the Marinade:In a large bowl, combine soy sauce, brown sugar, sesame oil, grated pear, garlic, ginger, onion, mirin (if using), rice vinegar, and black pepper. Marinate the Ribs:Place the short ribs in a large resealable plastic bag or bowl. Pour the marinade over the ribs, ensuring they are fully coated. Seal or cover and refrigerate for at least 6 hours, preferably overnight. Preheat Grill:Heat your grill or grill pan over medium-high heat. Lightly oil the grate to prevent sticking. Grill the Ribs:Remove ribs from marinade and let excess liquid drip off. Grill ribs for 3–4 minutes per side until charred and cooked through. Serve :Garnish with chopped green onions and toasted sesame seeds. Serve hot with steamed rice and Korean side dishes.
- To achieve the most authentic taste, utilize Korean or Asian pear in the marinade. It assists in tenderizing the meat.
- If pear juice is not available, you can use apple or pineapple juice as a substitute.
- It is also possible to broil kalbi or prepare it in a grill pan on the stove.
