- 1 kg pork shoulder or belly, sliced into thin strips
- 1/2 cup soy sauce
- 1/4 cup banana ketchup or tomato ketchup
- 1/4 cup brown sugar
- 2 tbsp vinegar or calamansi juice
- 1 tsp ground black pepper
- 1 tsp chili flakes (optional)
- 6 cloves garlic, minced
- 1 tsp salt
- Skewers (soaked in water if wooden)
- Cooking oil or melted butter for basting
Prepare the Marinade:Soy sauce, ketchup, brown sugar, vinegar, garlic, pepper, salt, and chili flakes should all be combined in a big bowl. Stir thoroughly. Marinate the Pork:Coat the pork pieces equally by adding them to the marinade. For optimal flavor, cover and refrigerate for at least two hours, preferably overnight. Skewer the Pork:After marinating, skewer the strips of pork. Preheat the Grill:Set the temperature of your grill or grill pan to medium-high. Apply oil to the brush to keep it from sticking. Grill the Skewers:Put skewers of pork on the grill. For more moisture and caramelization, baste regularly with the remaining marinade or oil while cooking for 10 to 12 minutes on each side. Serve Hot:Serve the pork hot with rice, salad, or dipping sauce when it is cooked through and has a hint of burn.
